Keeping with quick and easy real foods, one of our favorite desserts/snacks is our Vanilla Chia Pudding, which has only 1 gm net Carbs. It ticks all the boxes, keto, paleo and vegan.

Ingredients
- 250 ml Coconut Cream (only the cream on top of refrigerated coconut cream, not water part)
- 250 ml Unsweetened Almond Milk
- 45 gm Chia Seeds
- 20 drops SweetLeaf Stevia Liquid Vanilla Creme Sweet Drops
- 1 tsp Pink Himalayan Salt
Instructions
- Blend the coconut cream, almond milk, Sweetleaf Stevia Drops, and salt itill all well combined.
- Add chia seeds and stir through till well distributed. (do not blend)
- Divide into 4 small bowls (I like jars as easy to seal once set)
- Refrigerate for 4 hrs with overnight being better
- Enjoy
