Tacos have always been a favorite in our house in the past and with vistors coming over wanted something easy for all to enjoy, including the kids.
We came up with keto/paleo version and the tasty cheese taco shells were a hit especially.

Ingredients
- 500 gm Beef Mince
- 400 gm Tasty Cheese
- 50 gm diced Capsicum (red, green or my preference a combination of both)
- 1 small Onion diced
- 1 ½ Cumin seeds
- ¼ tsp Oregano
- 1 tsp Pink Himalayan Salt
- 1 tsp Ground Black Pepper
- 1 tbsp Chilli Powder
- ¼ tsp Garlic Powder
- ¼ tsp Onion Powder
- ½ tsp Paprika
- Additonal 80 gm Tasty Cheese
- 160 gm Shredded Lettuce
- 1 x Tomato Diced
Instructions
- Taco shells
- Preheat oven to 220 deg C
- Trace circles on baking paper approx 20cm in dia (I use small plate as template)
- Place baking paper on a baking tray
- Shred cheese and spread 50 gm of cheese on paper within circles
- Place tray in oven and bake for 10-15 mins so as cheese is melted and golden
- Allow to cool a little then curl into taco shape and place between 2 glasses to hold in shape.
- Repeat to make 8 shells
- Spice Mix
- Place all spices into mortar and pestle and grind together.
- Meat
- Add diced onion to frypan and cook till translucent
- Add spices and mince and cook till brown
- Add 100ml of water to help create a little sauce.
- Build Tacos putting mince, lettuce, tomato and cheese on top.
