With a little twist on a traditional Chicken Parma, we enjoy with a hint of Sriracha chilli, however you can omit easly

Ingredients
- 500 gm Chicken Breast Fillets, butterflied
- 200 gm Sliced Ham
- 200 gm Mozzarella Cheese
- 4 tbsp Low Carb Tomato Sauce (optional replace 2 tbsp sauce with 2 tbsp Sriracha Chilli Sauce)
- 2 cups Ground Pork Rinds
- 1 beated Egg
- 4 tbsp Coconut Oil
Instructions
- Heat frypan and add 2 tbsp coconut oil
- Cut the butterflied chicken breasts into 2 pieces.
- Dip the chicken in egg and then coat with pork rinds
- Place into frypan, turning when golden
- Add extra 2 tbsp coconut oil when on 2nd sides
- Mix sauces together is using both tomato and sriracha
- When cooked, spread sauce on chicken,, then place ham and cheese on top.
- Place under grill, to melt the cheese.
- Serve with vegies
- Enjoy
