After so many main meals we thought we should add something sweet to enjoy afterwards.
Simple and easy to make the night before and have chilling in the fridge, and can have either with or without the coconut base.
We make as individuals, however can also increase the quantities and place in a spring pan to slice and serve if having friends around.

- 2 tbsp Butter
- 15 gm Organic Coconut Flour
- 180 ml Thickened Cream
- 5 gm Stevia
- 1 sachet Aeroplane Lite Jelly – Lime Flavour
Instructions
- Cheesecake
- Dissolve jelly sachet in ¼ cup boiling water.
- Whip cream and set aside.
- Mix stevia and cream cheese together till smooth then add dissolved jelly solution and mix well
- Fold in whipped cream
- Base (optional)
- Heat butter over medium heat
- When melted add coconut flour, stirring till lightly brown
- Putting together
- If having coconut base, spoon into glasses or ramekin dish, pressing down firmly
- Spoon cheesecake mixture on top of coconut base, or if having baseless, just spoon into glasses or ramekins
- Place into fridge for a minimum of 4 hrs, I prefer overnight
- Enjoy
