A fantastic way to start the day with this breakfast frittata.
Can be made in advance and reheated or have cold, as Jacq does at work.

Ingredients
- 4 x Chorizos or Kransys
- 9 x Eggs
- 250ml Unsweetened Almond Milk
- 40g baby Spinach
- 1 cup Button Mushrooms
- Salt and pepper to season if desired
Method
- Preheat the oven to 180°
- Cut mushrooms and chorizo into slices or diced.
- Place into hot pan to fry, moving occasionally.
- Beat the eggs lightly and mix in the milk.
- Add the spinach to the egg and milk mixture.
- Line a quiche or pie try with baking paper
- Pour in egg mixture.
- Once mushrooms and chorizo have cooked, add to the quiche tray.
- Make sure the mixture is spread evenly around the tray and place in the oven for roughly 30-40 minutes or until the top is golden brown.
- Enjoy
