Old favorite which we just had to keto-fy. Instead of pasta , we dehydrated some large zucchini slices and it came out perfect. Fed the family, and all enjoyed.

Ingredients
- 800 gm Lean Beef Mince
- 200 gm Minces Liver (omit if preferred but increase beef mince to 1kg)
- 1 medium Onion
- 1 tsp Cayenne Pepper
- 600 gm chopped Red Tomatoes
- 2 cloves minced garlic
- 350 gm Zucchini
- 120 gm grated Mozzarella Cheese
- Keto Bechamel Sauce
Instructions
- Preheat oven to 180 deg
- Thinly slice zucchini and lay on paper towel, then sprinkle with salt and leave for 1-2
- hrs to allow some of the moisture to be absorbed. (alternative – use vegetable dehydrator to dehydrate prior to starting, my preferred method)
- In a large pan, heat oil, then sauté onion and garlic
- Add mince, liver, and cayenne pepper then cook till meat is brown
- Place a layer of meat sauce into oven proof dish
- Lay some of the zucchini on top on mince, followed by a layer of bechamel sauce
- Repeat, mince, zucchini and bechamel
- Sprinkle Mozzarella Cheese on top then place into oven for 30 mins or till golden
- Serve and enjoy
