Great comfort food, and perfect served with cauliflower mash, or as we did this time, purple cauliflower rice.

Ingredients
- 2 Lamb Shanks
- 400 gm Diced Tomatoes
- 2 cloves Garlic
- 2 stalks of Celery
- 1 medium Onion
- 65 ml red wine
Instructions
- Heat pan and sear lamb shanks
- Whilst searing, dice onion, and chop celery
- When lamb seared, remove and place aside.
- Add onion, garlic and celery to pan and sauté till onion is translucent
- When ready transfer to slow cooker and add tin of diced tomatoes
- Pour red wine into pan, deglazing it, and reduce to about 50%
- Add reduced red wine to slow cooker and stir well
- Add lamb shanks, and stir again, set timer and cook for 8 hrs on low heat
- Serve and enjoy
