With summer over and winter on the horizon, we decided to get come up with a recipe for a warming soup, so a chicken laksa was the answer.
Very easy to make and a meal in itself.

Serves 4
Ingredients
- 500 gm Chicken Fillets
- 500 ml Water
- 500 ml Chicken Broth
- bunch of Coriander
- 3 Spring Onions
- 4 Kafir Lime Leaves
- 2 cm piece of Ginger
- 3 x Birdseye Chillis
- 2 x Garlic Cloves
- 1 tbsp Peanut Butter
- 1 tbsp Tamari Sauce
- 1 tbsp Coconut Oil
- 400ml Coconut Milk
- 100 gm Asparagus
- 1 pkt Konjac Noodles
Method
- Dice chicken fillets into 2cm cubes.
- Put water onto boil, add chicken broth
- In a food processer add Chilli, ginger, coriander stalks spring onions and crushed garlic, kafir lime leaves, peanut butter, coconut oil, tamari sauce and blend well
- Add paste to boiling pot
- Add diced chicken and simmer till cooked
- While cooking rinse noodles well and drain
- when chicken is almost cooked, add coconut milk, asparagus and lime juice and simmer for further 5 mins
- Add noodles allowing them to warm and thicken with konjac powder if necessary
- Serve with sliced Chilli and coriander on top
