Simple delicous halloumi salad which is fantastic as both a lunch or dinner.

Ingredients
- 250 gm Halloumi Cheese
- ½ Lemon
- 4 Garlic Cloves
- 20 mls Avocado Oil
- 50 gm Pepita Seeds
- 4 cups Lettuce of choice
Instructions
- Place oil in a small pan with garlic cloves and heat.
- When brown add the pepita seeds and continue to cook till pepitas are crisp
- Thinly slice lemon
- Heat fry pan over medium heat
- Gently fry the lemon slices when browned, turn over and add the sweetener on top of each slice.
- Again when browned, turn a 2nd time so as sweetener is caramelizing with lemon
- Remove lemon from pan and place on plate
- Add cheese to pan and cook both sides.
- While cooking, add some pepitas and garlic to the plate, and top with lettuce.
- Once cheese is brown on both sides, add to salad, sprinkle remaining pepitas and drizzle avocado oil over as a dressing
