For many, Friday’s especially Good Friday are a day to avoid meat, and a common protein substitute is salmon, so we came up with smoked salmon in the fridge, we came up with this Smoked Salmon Frittata

Cooking Time: 30 mins
Ingredients:
- 6 x Large Eggs
- 125 ml Milk Kefir (regular full fat milk or cream easy substitute)
- 400 gm Smoked Salmon (canned salmon also will go equally as well)
- 40 gm Goats Cheese
- Dill
- Pink Himalayan Salt (to taste)
Method:
- Beat the eggs with the kefir milk and salt until well combined.
- Line 8″ round pan with baking paper
- Pour half of egg mixture into lined pan
- Add salmon pieces and goats cheese to pan, spacing evenly
- Pour remainder of egg to pan
- Sprinkle dill on top
- Place into oven and bake for 30 mins on middle shelf
- Remove from oven, allow to sit for 5 mins to ensure well set
- Remove from pan, serve and enjoy
