As a snack or a base for many of our recipes pork rinds are fantastic.
Store bought are good but many have hidden nasties in them including industrial seed oils, so we prefer to make them ourselves, and they are easy to do with a few different methods.
Ingredients
- 500 gm Pork skin (freerange if possible)
- 3 tbsp salt
Preparation
- Place large pot of water on to boil and add salt
- Cut pork skin into sheets/pieces around 15cm x 15cm
- Place pieces into boiling water and simmer for 90 mins (when outer sin soft enough to pierce with fork easily)
- Place on cooking rack and allow to cool.
- Place on chopping board skin side down and with sharp knife remove as much of far as possible.
- Slice fat free skin into 2cm wide strips
- Dehydrate methods can be either in oven or in dehydrator until
- Oven – place 2cm wide strips direct on oven racks and dehydrate at low oven temp (80 deg Celsius) overnight with oven door slightly open.
- Dehydrator – place strips into dehydrator overnight
- Once dry and stiff its time to fry either with air fryer or oil fryer.
- Air fryer – place 4 or 5 of the strips into air fryer at 200 deg Celsius for 3-4 mins. You will hear them moving inside the basket when ready.
- Oil frying – heat oil in wok, then deep fry till puff up and become light
- As cooked, place in bowl and sprinkle with salt to taste.
- Store in airtight container.
