Mother’s Day in Australia and what better to give to your mother than freshly made Peanut or Almond Brittle without any nasties in it, just 3 ingredients.
Ingredients:
- 250 gm Organic Butter
- 200 gm Erythritol (click here to purchase)
- 250 gm Almonds or Peanuts
Method
- Line baking tray with baking paper and evenly spread the Almonds or Peanuts across lined tray.
- Option – Place erythritol into food processor or blender and blitz into fine powder
- Heat butter in saucepan over medium heat until melted, and then slowly add erythritol whilst stirring to ensure it disolves as adding
- Once all added, continue heating until butter mixture is at 150 deg C, stirring slowly.
- Maintain 150 deg for 10 mins whilst stirring, you will notice mixture getting darker in colour.
- Remove from heat, and carefully pour over almonds or peanuts in tray, ensuring even coverage.
- Allow to cool on bench then 30 mins later transfer to fridge to continue to cool.
- 2-3 hrs later, remove from fridge, break up and place into airtight container.
