Creamy ketogenic and paleo carbonara with fettuccini alternative with only 3.5 gm net carbs.

Ingredients
1 tbsp Avocado Oil
1 clove of Garlic, crushed
1 cup Diced Speck
2 x 400 gm packet Slendier Calorie Clever Fettuccini Sytle Konjac Noodles.
4 Eggs
75g Parmesan Cheese
75g Pecorino Cheese
1 tbsp Olive Oil
1/4 tsp Pink Himilayan Sea Salt
Method
- Place saucepan of water on to boil for noodles.
- IHeat a frypan over medium heat, add 1 tbsp avocado oil, garlic and spec and cook for approx 5 minutes. Once cooked, turn off and allow to cool.
- Rinse the noodles under cold water , rinse very well
- Add the noodles to the boiling water and simmer for 5 minutes.
- In a bowl, add 2 whole eggs and 2 egg yolks, cheese, olive oil and salt, mix well together.
- When noodles are ready, heat the frypan again, then add 60 ml of the water and add to the frypan containing spec and garlic, along with the noodles.
- Quickly fry for 2-3 mins then turn heat off.
- Add in the egg mix and stir it all together until the egg mix turns creamy.
- Serve and enjoy
