It was the coldest may day in 20 years in Melbourne yesterday so a soup was needed to warm up a little.
Looked at what I had in fridge, freezer and pantry to come up with this warming soup.

Serves 6
Ingredients
- 500 gm Cauliflower – Riced
- 250 gm Cooked Prawnsn (I buy frozen so defrost first)
- 30 gm Spring Onions Chopped
- 30 gm Korma Paste
- 400 ml Coconut Milk
- 800 ml Water
- 1 tbsp Coconut Oil
Method
- Heat coconut oil in deep frypan or large saucepan
- Gently cook the cauliflower rice and spring onions for 5 mins
- Whilst cooking, dice up prawns
- Add korma paste and stir through rice and spring onions, till well coated and fragrant
- Add coconut milk, water and prawn meat.
- Bring to just under boil.
- Remove from heat and serve.
- Enjoy
